Zucchini Noodles with Pesto

A light and fresh dish, perfect for a quick lunch or dinner. The zucchini noodles are tossed in a delicious homemade pesto sauce.

Ingredients

  • Salt and pepper - To taste
  • Olive oil - 1/2 cup
  • Parmesan cheese - 1/2 cup, grated
  • Pine nuts - 1/4 cup
  • Garlic - 2 cloves
  • Basil leaves - 2 cups
  • Zucchini - 2 large, spiralized

Instructions

  1. In a food processor, combine the basil, garlic, pine nuts, and Parmesan cheese. Pulse until coarsely chopped.
  2. With the food processor running, slowly add the olive oil until the pesto is smooth. Season with salt and pepper.
  3. In a large skillet, add the zucchini noodles and cook for 2-3 minutes, until just tender.
  4. Remove from heat and toss the zucchini noodles with the pesto.
  5. Serve immediately, garnished with extra Parmesan cheese if desired.
