Avocado Pesto

This creamy and flavorful avocado pesto is a delicious twist on traditional pesto sauce.

Ingredients

  • Pasta - 8 ounces, cooked
  • Salt and pepper - To taste
  • Olive oil - 1/4 cup
  • Parmesan cheese - 1/4 cup, grated
  • Lemon juice - 2 tablespoons
  • Pine nuts - 1/4 cup
  • Garlic - 2 cloves
  • Basil leaves - 1 cup
  • Avocado - 2 ripe avocados

Instructions

  1. In a food processor, combine the avocado, basil leaves, garlic, pine nuts, lemon juice, Parmesan cheese, olive oil, salt, and pepper.
  2. Blend until smooth and creamy.
  3. Taste and adjust the seasoning if needed.
  4. Toss the avocado pesto with cooked pasta until well coated.
