Pesto Alla Genovese

Ingredients

  • Black pepper - 1/4 teaspoon
  • Salt - 1/2 teaspoon
  • Extra virgin olive oil - 1/2 cup
  • Parmesan cheese - 1/2 cup, grated
  • Garlic cloves - 2
  • Pine nuts - 1/2 cup
  • Fresh basil leaves - 2 cups

Instructions

  1. In a food processor or blender, combine the basil leaves, pine nuts, garlic cloves, Parmesan cheese, salt, and black pepper.
  2. Pulse until the ingredients are finely chopped.
  3. While the processor is running, slowly drizzle in the olive oil until the mixture is smooth and well combined.
  4. Taste and adjust the seasoning if needed.
  5. Transfer the pesto to a jar or container and refrigerate until ready to use.
  6. Serve the pesto alla Genovese with cooked pasta, as a spread on bread, or as a sauce for grilled meats or vegetables.
