Genovese Pesto

This traditional Genovese pesto is made with fresh basil, pine nuts, garlic, Parmesan cheese, and olive oil.

Ingredients

  • Black pepper - To taste
  • Salt - To taste
  • Extra virgin olive oil - 1/2 cup
  • Parmesan cheese - 1/2 cup, grated
  • Garlic cloves - 2
  • Pine nuts - 1/4 cup
  • Fresh basil leaves - 2 cups

Instructions

  1. In a food processor or blender, combine the basil leaves, pine nuts, garlic, and Parmesan cheese.
  2. Pulse until the ingredients are finely chopped.
  3. While the processor is running, slowly drizzle in the olive oil until the pesto reaches a smooth consistency.
  4. Season with salt and black pepper to taste.
  5. Transfer the pesto to a jar or container and store in the refrigerator until ready to use.
  6. Serve the Genovese pesto with pasta, as a spread on bread, or as a sauce for grilled meats or vegetables.
