Peach and Nectarine Compote

This delicious peach and nectarine compote is a perfect summer dessert. It's made with ripe peaches and nectarines, simmered in a sweet syrup.

Ingredients

  • Water - 1/4 cup
  • Cinnamon - 1/2 teaspoon
  • Vanilla extract - 1 teaspoon
  • Lemon juice - 1 tablespoon
  • Sugar - 1/2 cup
  • Nectarines - 4, peeled, pitted, and sliced
  • Peaches - 4, peeled, pitted, and sliced

Instructions

  1. In a large saucepan, combine the peaches, nectarines, sugar, lemon juice, vanilla extract, cinnamon, and water.
  2. Bring the mixture to a boil over medium heat, stirring occasionally.
  3. Reduce the heat to low and simmer for about 10-15 minutes, or until the fruits are tender and the syrup has thickened slightly.
  4. Remove from heat and let the compote cool for a few minutes.
  5. Serve warm or chilled. It can be enjoyed on its own, or as a topping for yogurt, ice cream, or pancakes.
