Peach and Nectarine Pie

This delicious peach and nectarine pie is made with fresh juicy peaches and nectarines, and a flaky homemade crust.

Ingredients

  • Turbinado sugar - 1 tablespoon (for sprinkling)
  • Egg - 1, beaten (for egg wash)
  • Vanilla extract - 1 teaspoon
  • Cinnamon - 1 teaspoon
  • Lemon juice - 1 tablespoon
  • All - purpose flour - 1/4 cup
  • Granulated sugar - 1 cup
  • Nectarines - 2 cups, peeled and sliced
  • Peaches - 4 cups, peeled and sliced
  • Pie crust - 2 store-bought or homemade crusts

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Roll out one pie crust and place it in a 9-inch pie dish.
  3. In a large bowl, combine the sliced peaches, sliced nectarines, granulated sugar, flour, lemon juice, cinnamon, and vanilla extract. Mix well to coat the fruit.
  4. Pour the fruit mixture into the prepared pie crust.
  5. Roll out the second pie crust and cut it into strips to create a lattice pattern on top of the pie. Alternatively, you can place the whole pie crust on top and cut slits to allow steam to escape.
  6. Brush the top crust with the beaten egg and sprinkle with turbinado sugar.
  7. Bake for 40-45 minutes, or until the crust is golden brown and the filling is bubbly.
  8. Remove from the oven and let cool for at least 1 hour before serving.
