Peach and Apricot Compote

This sweet and tangy peach and apricot compote is perfect for topping yogurt, pancakes, or enjoying on its own.

Ingredients

  • Water - 1/4 cup
  • Vanilla extract - 1 teaspoon
  • Lemon juice - 1 tablespoon
  • Sugar - 1/4 cup
  • Apricots - 4, pitted and sliced
  • Peaches - 4, peeled, pitted, and sliced

Instructions

  1. In a saucepan, combine the peaches, apricots, sugar, lemon juice, vanilla extract, and water.
  2. Bring the mixture to a boil over medium heat, then reduce the heat to low and simmer for 15-20 minutes, or until the fruits are soft and the liquid has thickened slightly.
  3. Remove from heat and let the compote cool before serving.
  4. Serve the peach and apricot compote warm or chilled, as desired.
