Peach and Blueberry Compote

This delicious peach and blueberry compote is a perfect topping for pancakes, waffles, or yogurt.

Ingredients

  • Water - 2 tablespoons
  • Cornstarch - 1 tablespoon
  • Cinnamon - 1/4 teaspoon
  • Vanilla extract - 1 teaspoon
  • Lemon juice - 1 tablespoon
  • Sugar - 1/4 cup
  • Blueberries - 1 cup
  • Peaches - 4 medium, peeled, pitted, and sliced

Instructions

  1. In a saucepan, combine the peaches, blueberries, sugar, lemon juice, vanilla extract, and cinnamon.
  2. Cook over medium heat for about 5 minutes, until the fruit starts to release its juices.
  3. In a small bowl, whisk together the cornstarch and water until smooth.
  4. Add the cornstarch mixture to the saucepan and stir well.
  5. Continue cooking for another 5 minutes, until the compote thickens.
  6. Remove from heat and let cool slightly before serving.
  7. Serve the peach and blueberry compote warm or chilled over pancakes, waffles, or yogurt.
