Peach and Raspberry Compote

This delicious peach and raspberry compote is a perfect topping for pancakes, waffles, or yogurt.

Ingredients

  • Water - 1/4 cup
  • Vanilla extract - 1 teaspoon
  • Lemon juice - 1 tablespoon
  • Sugar - 2 tablespoons
  • Raspberries - 1 cup
  • Peaches - 4, peeled, pitted, and sliced

Instructions

  1. In a saucepan, combine the peaches, raspberries, sugar, lemon juice, vanilla extract, and water.
  2. Bring the mixture to a simmer over medium heat, stirring occasionally.
  3. Reduce the heat to low and let the compote cook for about 10 minutes, or until the peaches are soft and the raspberries have broken down.
  4. Remove from heat and let the compote cool slightly before serving.
