This refreshing sushi bowl combines the flavors of fresh peas, smoked salmon, and sushi rice for a delicious and healthy meal.

Ingredients

  • Green onions - 2, chopped
  • Sesame seeds - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Rice vinegar - 1 tablespoon
  • Soy sauce - 2 tablespoons
  • Carrot - 1, julienned
  • Cucumber - 1/2, sliced
  • Avocado - 1, sliced
  • Smoked salmon - 4 ounces, sliced
  • Frozen peas - 1 cup, thawed
  • Sushi rice - 1 cup, cooked

Instructions

  1. In a small bowl, mix together soy sauce, rice vinegar, and sesame oil to make the dressing.
  2. In a large bowl, combine cooked sushi rice, thawed peas, sliced smoked salmon, avocado, cucumber, and julienned carrot.
  3. Pour the dressing over the sushi bowl and toss gently to combine.
