Halibut and Avocado Poke Bowl

This refreshing poke bowl features fresh halibut, creamy avocado, and a variety of colorful vegetables, all served over a bed of sushi rice.

Ingredients

  • Nori sheets - 2, torn into small pieces, for garnish
  • Sesame seeds - 1 tablespoon, for garnish
  • Sesame oil - 1 tablespoon
  • Rice vinegar - 1 tablespoon
  • Soy sauce - 2 tablespoons
  • Sushi rice - 2 cups, cooked
  • Green onion - 2, thinly sliced
  • Red bell pepper - 1/2, thinly sliced
  • Carrot - 1, julienned
  • Cucumber - 1/2, thinly sliced
  • Avocado - 1, ripe, cubed
  • Halibut fillets - 8 ounces, sushi-grade, cubed

Instructions

  1. In a bowl, combine the halibut, avocado, cucumber, carrot, red bell pepper, and green onion.
  2. In a separate small bowl, whisk together the soy sauce, rice vinegar, and sesame oil.
  3. Pour the dressing over the halibut and vegetable mixture, and gently toss to combine.
  4. Divide the sushi rice between two bowls.
  5. Top the rice with the halibut and vegetable mixture.
  6. Garnish with sesame seeds and torn nori sheets.
  7. Serve immediately and enjoy!
