Ingredients

  • Jalapenos - 2, seeded and chopped
  • Pastrami - 1/2 cup, chopped
  • Butter - 1/4 cup, melted
  • Eggs - 2
  • Milk - 1 cup
  • Salt - 1/2 teaspoon
  • Baking powder - 1 tablespoon
  • Sugar - 1/4 cup
  • All - purpose flour - 1 cup
  • Cornmeal - 1 cup

Instructions

  1. Preheat your oven to 400°F (200°C) and grease a 9-inch round cake pan.
  2. In a large bowl, combine the cornmeal, flour, sugar, baking powder, and salt.
  3. In another bowl, whisk together the milk, eggs, and melted butter.
  4. Gradually add the wet ingredients to the dry ingredients, stirring until just combined.
  5. Fold in the chopped pastrami and jalapenos.
  6. Pour the batter into the prepared pan and smooth the top with a spatula.
  7. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow the cornbread to cool in the pan for 10 minutes before slicing and serving.
