Bacon, Onion, and Cheddar Cornbread

A savory cornbread packed with crispy bacon, caramelized onions, and sharp cheddar cheese.

Ingredients

  • Eggs - 2
  • Milk - 1 cup
  • Salt - 1/2 teaspoon
  • Baking powder - 4 teaspoons
  • Sugar - 1/4 cup
  • All - purpose flour - 1 cup
  • Cornmeal - 1 cup
  • Cheddar cheese - 1 cup, shredded
  • Onion - 1 large, finely chopped
  • Bacon - 6 slices

Instructions

  1. Preheat the oven to 400°F and grease a 9-inch round baking pan.
  2. Cook the bacon in a skillet over medium heat until crispy. Remove the bacon and set aside, leaving the bacon fat in the skillet.
  3. Add the onion to the skillet and cook until caramelized, about 10 minutes. Remove from heat.
  4. In a large bowl, combine the cornmeal, flour, sugar, baking powder, and salt.
  5. In another bowl, whisk together the milk and eggs. Stir in the cooked bacon, caramelized onions, and shredded cheese.
  6. Add the wet ingredients to the dry ingredients and stir until just combined.
  7. Pour the batter into the prepared baking pan.
  8. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
  9. Let the cornbread cool for a few minutes before slicing and serving.
