Almojabanas

Almojabanas are delicious Colombian cheese bread rolls that are crispy on the outside and soft on the inside.

Ingredients

  • Colombian cheese (queso blanco) - 1 cup, grated
  • Milk - 1 cup
  • Eggs - 2
  • Butter - 1/4 cup, melted
  • Sugar - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Baking powder - 1 tablespoon
  • All - purpose flour - 1/2 cup
  • Cornmeal - 2 cups

Instructions

  1. Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine the cornmeal, flour, baking powder, salt, and sugar.
  3. In a separate bowl, whisk together the melted butter, eggs, and milk.
  4. Pour the wet ingredients into the dry ingredients and mix until well combined.
  5. Fold in the grated Colombian cheese.
  6. Using a spoon or ice cream scoop, drop spoonfuls of the batter onto the prepared baking sheet.
  7. Bake for 20-25 minutes, or until the almojabanas are golden brown and crispy on the outside.
  8. Serve warm and enjoy!
