Ingredients

  • Salt and pepper - To taste
  • Dijon mustard - 1 teaspoon
  • Lemon juice - 2 tablespoons
  • Olive oil - 1/4 cup
  • Red onion - 1/2, thinly sliced
  • Cucumber - 1, sliced
  • Cherry tomatoes - 1 cup, halved
  • Mixed salad greens - 4 cups
  • Crayfish - 1 pound, cooked and peeled

Instructions

  1. In a large bowl, combine the crayfish, salad greens, cherry tomatoes, cucumber, and red onion.
  2. In a small bowl, whisk together the olive oil, lemon juice, Dijon mustard, salt, and pepper.
