Cape Salmon Salad

Ingredients

  • Salt and pepper - To taste
  • Honey - 1 teaspoon
  • Dijon mustard - 1 teaspoon
  • Lemon juice - 2 tablespoons
  • Olive oil - 2 tablespoons
  • Red onion - 1 small, thinly sliced
  • Cucumber - 1, sliced
  • Cherry tomatoes - 1 cup, halved
  • Mixed salad greens - 8 cups
  • Cape salmon fillets - 4 (6 ounce)

Instructions

  1. Preheat grill to medium-high heat.
  2. Season the salmon fillets with salt and pepper, then grill for 4-5 minutes on each side, or until cooked to your liking.
  3. In a large bowl, combine the salad greens, cherry tomatoes, cucumber, and red onion.
  4. In a small bowl, whisk together the olive oil, lemon juice, Dijon mustard, honey, salt, and pepper to make the vinaigrette.
  5. Drizzle the vinaigrette over the salad and toss to combine.
  6. Top the salad with the grilled salmon fillets and serve.
