Ingredients

  • Fresh parsley - 1 tablespoon, chopped
  • Black pepper - 1/4 teaspoon
  • Salt - 1/2 teaspoon
  • Parmesan cheese - 1/4 cup, grated
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Zucchini - 4 medium-sized, sliced

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a large bowl, combine the sliced zucchini, olive oil, minced garlic, grated Parmesan cheese, salt, and black pepper. Toss until the zucchini slices are evenly coated.
  3. Spread the zucchini slices in a single layer on a baking sheet.
