Fresh parsley - 1 tablespoon, chopped
Black pepper - 1/4 teaspoon
Salt - 1/2 teaspoon
Parmesan cheese - 1/4 cup, grated
Garlic - 2 cloves, minced
Olive oil - 2 tablespoons
Zucchini - 4 medium-sized, sliced
Instructions
Preheat the oven to 425°F (220°C).
In a large bowl, combine the sliced zucchini, olive oil, minced garlic, grated Parmesan cheese, salt, and black pepper. Toss until the zucchini slices are evenly coated.
Spread the zucchini slices in a single layer on a baking sheet.
Roast in the preheated oven for 15-20 minutes, or until the zucchini is tender and lightly browned.
