Parmesan Garlic Roasted Bell Peppers

These Parmesan Garlic Roasted Bell Peppers are a delicious and flavorful side dish. The bell peppers are roasted to perfection with a garlic and Parmesan cheese topping.

Ingredients

  • Fresh parsley - 1 tablespoon, chopped
  • Black pepper - 1/4 teaspoon
  • Salt - 1/2 teaspoon
  • Parmesan cheese - 1/4 cup, grated
  • Garlic - 4 cloves, minced
  • Olive oil - 2 tablespoons
  • Bell peppers - 4, any color

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Cut the bell peppers in half lengthwise and remove the seeds and membranes.
  3. In a small bowl, mix together the minced garlic, grated Parmesan cheese, salt, and black pepper.
  4. Brush the inside of each bell pepper half with olive oil.
  5. Fill each bell pepper half with the garlic and Parmesan cheese mixture.
  6. Place the filled bell peppers on a baking sheet lined with parchment paper.
  7. Roast in the preheated oven for 20-25 minutes, or until the bell peppers are tender and the cheese is golden and bubbly.
  8. Remove from the oven and sprinkle with fresh chopped parsley.
  9. Serve hot as a side dish or as a topping for grilled meats.
