This Parmesan crusted cod is a delicious and easy-to-make dish that is perfect for a quick weeknight dinner.

Ingredients

  • Lemon wedges - For serving
  • Fresh parsley - 2 tablespoons, chopped
  • Olive oil - 2 tablespoons
  • Salt and pepper - To taste
  • Paprika - 1/2 teaspoon
  • Garlic powder - 1 teaspoon
  • Breadcrumbs - 1/2 cup
  • Parmesan cheese - 1/2 cup, grated
  • Cod fillets - 4 pieces

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a shallow dish, combine the grated Parmesan cheese, breadcrumbs, garlic powder, paprika, salt, and pepper.
  3. Brush the cod fillets with olive oil on both sides.
  4. Dredge each fillet in the Parmesan mixture, pressing gently to adhere the coating.
