Pan de Elote

Pan de Elote is a traditional Mexican sweet cornbread that is moist, flavorful, and perfect for any occasion.

Ingredients

  • Salt - 1/2 teaspoon
  • Vanilla extract - 1 teaspoon
  • Baking powder - 1 tablespoon
  • Eggs - 2
  • Milk - 1/4 cup
  • Butter - 1/4 cup, melted
  • Sugar - 1/2 cup
  • All - purpose flour - 1 cup
  • Sweet corn - 2 cups, fresh or frozen

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9-inch square baking dish.
  2. In a blender or food processor, blend the sweet corn until smooth.
  3. In a large mixing bowl, combine the corn puree, flour, sugar, melted butter, milk, eggs, baking powder, vanilla extract, and salt. Mix well until all ingredients are fully incorporated.
  4. Pour the batter into the greased baking dish and smooth the top with a spatula.
  5. Bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean.
  6. Remove from the oven and let it cool for a few minutes before slicing and serving.
