Onion and Bacon Stuffed Mushrooms

A savory appetizer made with mushrooms, onions, and bacon.

Ingredients

  • Salt and pepper - to taste
  • Parmesan cheese - 1/4 cup, grated
  • Breadcrumbs - 1/4 cup
  • Parsley - 2 tablespoons, chopped
  • Garlic - 2 cloves, minced
  • Butter - 2 tablespoons
  • Onion - 1/2 cup, diced
  • Bacon - 4 strips
  • Large mushrooms - 12

Instructions

  1. Preheat oven to 350 degrees F.
  2. Clean mushrooms and remove stems.
  3. Chop bacon into small pieces and cook in a skillet over medium heat until crisp.
  4. Remove bacon from skillet and set aside.
  5. Add butter to skillet and cook onions until softened.
  6. Add garlic and parsley and cook for 1 minute.
  7. Remove from heat and stir in bacon, breadcrumbs, Parmesan cheese, salt and pepper.
  8. Stuff mushrooms with bacon mixture and place in a greased baking dish.
  9. Bake for 15-20 minutes, or until mushrooms are tender.
