Prawn Stuffed Mushrooms

These delicious prawn stuffed mushrooms are a perfect appetizer for any occasion.

Ingredients

  • Salt and pepper - To taste
  • Olive oil - 2 tablespoons
  • Fresh parsley - 2 tablespoons, chopped
  • Parmesan cheese - 1/4 cup, grated
  • Breadcrumbs - 1/2 cup
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Prawns - 200g, peeled and deveined
  • Large mushrooms - 12

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Remove the stems from the mushrooms and set aside. Place the mushroom caps on a baking sheet.
  3. Finely chop the mushroom stems.
  4. Heat olive oil in a pan over medium heat. Add garlic and onion, and sauté until softened.
  5. Add the chopped mushroom stems and prawns to the pan. Cook until the prawns are pink and cooked through.
  6. Remove from heat and let it cool slightly. Then, transfer the mixture to a bowl.
  7. Add breadcrumbs, grated Parmesan cheese, chopped parsley, salt, and pepper to the bowl. Mix well.
  8. Spoon the prawn mixture into the mushroom caps, filling each cap generously.
  9. Bake in the preheated oven for 20-25 minutes, or until the mushrooms are tender and the filling is golden brown.
  10. Serve hot and enjoy!
