Nectarine and Plum French Toast

This delicious French toast is made with fresh nectarines, plums, and a hint of cinnamon.

Ingredients

  • Butter - For cooking
  • Maple syrup - To taste
  • Plums - 2, sliced
  • Nectarines - 2, sliced
  • Cinnamon - 1/2 teaspoon
  • Vanilla extract - 1 teaspoon
  • Milk - 1/2 cup
  • Eggs - 2
  • Bread slices - 4

Instructions

  1. In a shallow bowl, whisk together the eggs, milk, vanilla extract, and cinnamon.
  2. Heat a non-stick skillet or griddle over medium heat and melt a small amount of butter.
  3. Dip each bread slice into the egg mixture, allowing it to soak for a few seconds on each side.
  4. Place the soaked bread slices onto the heated skillet or griddle and cook until golden brown on each side, about 2-3 minutes per side.
  5. Remove the cooked French toast from the skillet and keep warm.
  6. In the same skillet, add a little more butter if needed and sauté the sliced nectarines and plums until slightly softened, about 2-3 minutes.
  7. Serve the French toast topped with the sautéed nectarines and plums.
  8. Drizzle with maple syrup and sprinkle with additional cinnamon if desired.
