Mushroom and Spinach Tart

This delicious mushroom and spinach tart is made with a flaky pastry crust, sautéed mushrooms, and fresh spinach.

Ingredients

  • Salt and pepper - To taste
  • Parmesan cheese - 1/2 cup, grated
  • Milk - 1/4 cup
  • Eggs - 2
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Onion - 1 small, diced
  • Spinach - 4 cups, chopped
  • Mushrooms - 8 ounces, sliced
  • Puff pastry - 1 sheet, thawed

Instructions

  1. Preheat the oven to 375°F.
  2. Roll out the puff pastry sheet and place it in a tart pan. Trim any excess pastry.
  3. In a large skillet, heat the olive oil over medium heat. Add the onions and garlic and cook until softened.
  4. Add the mushrooms and cook until they release their moisture and start to brown.
  5. Add the chopped spinach and cook until wilted. Season with salt and pepper.
  6. In a small bowl, whisk together the eggs and milk. Season with salt and pepper.
  7. Spread the mushroom and spinach mixture evenly over the puff pastry.
  8. Pour the egg mixture over the vegetables.
  9. Sprinkle grated Parmesan cheese on top.
  10. Bake for 30-35 minutes, or until the tart is golden brown and set.
  11. Allow the tart to cool slightly before serving. Enjoy!
