Mushroom and Spinach Quiche

This delicious mushroom and spinach quiche is perfect for breakfast, brunch, or a light dinner.

Ingredients

  • Salt and pepper - To taste
  • Cheddar cheese - 1 cup, shredded
  • Milk - 1 cup
  • Eggs - 4
  • Garlic - 2 cloves, minced
  • Onion - 1 small, diced
  • Spinach - 2 cups, chopped
  • Mushrooms - 8 ounces, sliced
  • Pie crust - 1, store-bought or homemade

Instructions

  1. Preheat the oven to 375°F.
  2. Place the pie crust in a 9-inch pie dish and set aside.
  3. In a skillet, heat some oil over medium heat.
  4. Add the diced onion and minced garlic, and cook until the onion is translucent.
  5. Add the sliced mushrooms and cook until they release their moisture and start to brown.
  6. Add the chopped spinach and cook until wilted.
  7. In a bowl, whisk together the eggs, milk, salt, and pepper.
  8. Spread the mushroom and spinach mixture evenly over the pie crust.
  9. Pour the egg mixture over the vegetables.
  10. Sprinkle the shredded cheddar cheese on top.
  11. Bake for 35-40 minutes, or until the quiche is set and golden brown.
  12. Allow the quiche to cool for a few minutes before slicing and serving.
