Moqueca

Moqueca is a traditional Brazilian fish stew made with coconut milk, tomatoes, peppers, and spices.

Ingredients

  • Olive oil - 2 tablespoons
  • Salt and pepper - To taste
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Cilantro - 1/4 cup, chopped
  • Lime juice - 2 tablespoons
  • Coconut milk - 1 can (13.5 oz)
  • Tomatoes - 2, diced
  • Bell peppers - 2, sliced
  • Garlic - 3 cloves, minced
  • Onion - 1, sliced
  • Fish fillets - 1 lb

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add the onion and garlic, and sauté until the onion is translucent.
  3. Add the bell peppers and tomatoes, and cook for 5 minutes.
  4. Stir in the paprika, cumin, salt, and pepper.
  5. Add the fish fillets to the pot, and pour in the coconut milk and lime juice.
  6. Cover the pot and simmer for 20 minutes, or until the fish is cooked through.
  7. Garnish with chopped cilantro before serving.
  8. Serve hot with rice or crusty bread.
