Tunisian Curry

This Tunisian curry is a flavorful and aromatic dish made with a blend of spices, vegetables, and protein of your choice.

Ingredients

  • Salt and pepper - To taste
  • Fresh cilantro - 1/4 cup, chopped
  • Lime juice - 2 tablespoons
  • Coconut milk - 1 cup
  • Vegetable broth - 2 cups
  • Protein (chicken, beef, or tofu) - 1 lb, cubed
  • Potatoes - 2, diced
  • Carrots - 2, sliced
  • Bell peppers - 2, sliced
  • Tomatoes - 2 large, diced
  • Tunisian spice blend - 2 tablespoons
  • Ginger - 1 tablespoon, grated
  • Garlic - 3 cloves, minced
  • Onion - 1 large, diced
  • Olive oil - 2 tablespoons

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the diced onion and cook until softened, about 5 minutes.
  3. Add the minced garlic, grated ginger, and Tunisian spice blend. Cook for another 2 minutes, stirring constantly.
  4. Add the diced tomatoes, sliced bell peppers, sliced carrots, diced potatoes, and cubed protein of your choice. Stir well to coat everything in the spices.
  5. Pour in the vegetable broth and coconut milk. Bring to a boil, then reduce the heat and simmer for 30 minutes, or until the vegetables are tender and the flavors have melded together.
  6. Stir in the lime juice and season with salt and pepper to taste.
  7. Serve the Tunisian curry hot, garnished with fresh cilantro. Enjoy with rice or bread.
