This mock tender roast is a budget-friendly alternative to traditional beef roasts. It's tender, juicy, and full of flavor.

Ingredients

  • Thyme - 1 tablespoon, chopped
  • Rosemary - 1 tablespoon, chopped
  • Red wine - 1/2 cup
  • Beef broth - 2 cups
  • Olive oil - 2 tablespoons
  • Paprika - 1 teaspoon
  • Onion powder - 1 teaspoon
  • Garlic powder - 1 teaspoon
  • Black pepper - 1 teaspoon
  • Salt - 1 tablespoon
  • Mock tender roast - 3 pounds

Instructions

  1. Preheat the oven to 325°F.
  2. Season the mock tender roast with salt, black pepper, garlic powder, onion powder, and paprika.
  3. Heat the olive oil in a large Dutch oven over medium-high heat.
  4. Add the mock tender roast and sear on all sides until browned, about 5 minutes per side.
  5. Remove the roast from the Dutch oven and set aside.
  6. Add the beef broth, red wine, rosemary, and thyme to the Dutch oven and bring to a boil.
  7. Return the roast to the Dutch oven and cover with a lid.
  8. Transfer the Dutch oven to the preheated oven and roast for 2 hours, or until the roast is tender and cooked through.
  9. Remove the roast from the Dutch oven and let it rest for 10 minutes before slicing and serving.
