Robin Hood Roast

This hearty and flavorful roast is inspired by the legendary hero, Robin Hood. It features tender beef, aromatic herbs, and a rich gravy.

Ingredients

  • Water - 1/4 cup
  • Flour - 2 tablespoons
  • Red wine - 1/2 cup
  • Beef broth - 1 cup
  • Black pepper - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Thyme - 2 sprigs
  • Rosemary - 2 sprigs
  • Garlic - 4 cloves, minced
  • Olive oil - 2 tablespoons
  • Beef roast - 3 pounds

Instructions

  1. Preheat the oven to 325°F.
  2. Season the beef roast with salt and black pepper.
  3. Heat olive oil in a large oven-safe pot or Dutch oven over medium-high heat.
  4. Sear the beef roast on all sides until browned, about 5 minutes per side.
  5. Remove the beef roast from the pot and set aside.
  6. In the same pot, add minced garlic, rosemary, and thyme. Cook for 1-2 minutes until fragrant.
  7. Add beef broth and red wine to the pot, scraping the bottom to release any browned bits.
  8. Return the beef roast to the pot and cover with a lid.
  9. Transfer the pot to the preheated oven and roast for about 2.5 to 3 hours, or until the beef is tender and easily pulls apart with a fork.
  10. Once the beef is cooked, remove it from the pot and let it rest for 10 minutes before slicing.
  11. Meanwhile, prepare the gravy by placing the pot with the cooking liquid on the stovetop over medium heat.
  12. In a small bowl, whisk together flour and water to create a slurry.
  13. Slowly pour the slurry into the pot while whisking continuously to avoid lumps.
  14. Continue cooking the gravy until it thickens to your desired consistency.
  15. Slice the beef roast and serve with the homemade gravy.
