A unique twist on the classic mac and cheese, this recipe incorporates the umami flavor of miso for a rich and savory dish.

Ingredients

  • Salt and pepper - To taste
  • Breadcrumbs - 1/2 cup
  • Cheddar cheese - 2 cups, shredded
  • White miso paste - 2 tablespoons
  • Milk - 2 cups
  • All - purpose flour - 2 tablespoons
  • Butter - 2 tablespoons
  • Macaroni - 2 cups

Instructions

  1. Preheat the oven to 375°F.
  2. Cook the macaroni according to the package instructions, then drain and set aside.
  3. In a large saucepan, melt the butter over medium heat. Stir in the flour until smooth.
  4. Gradually whisk in the milk, then add the miso paste and continue whisking until smooth.
  5. Bring the mixture to a simmer and cook until it thickens, about 2 minutes.
  6. Remove the saucepan from the heat and stir in the cheese until melted and smooth.
  7. Add the cooked macaroni to the saucepan and stir until well coated.
  8. Season with salt and pepper to taste.
  9. Transfer the macaroni to a baking dish and sprinkle with breadcrumbs.
  10. Bake for 15-20 minutes, or until the top is golden and bubbly.
