Cajun Mac and Cheese

This spicy and creamy Cajun mac and cheese is made with a blend of cheeses, pasta, and Cajun spices.

Ingredients

  • Breadcrumbs - 1/2 cup
  • Green onions - 2, chopped
  • Salt and pepper - To taste
  • Cajun seasoning - 2 teaspoons
  • Monterey jack cheese - 1 cup, shredded
  • Cheddar cheese - 1 cup, shredded
  • Milk - 2 cups
  • All - purpose flour - 2 tablespoons
  • Butter - 2 tablespoons
  • Macaroni - 2 cups

Instructions

  1. Preheat the oven to 350°F.
  2. Cook the macaroni according to the package instructions, then drain and set aside.
  3. In a large pot, melt the butter over medium heat. Add the flour and stir until smooth.
  4. Gradually whisk in the milk, then bring to a boil. Reduce the heat and simmer, stirring constantly, until the sauce thickens.
  5. Remove the pot from the heat and stir in the cheeses, Cajun seasoning, salt, and pepper until the cheeses are melted and the sauce is smooth.
  6. Add the cooked macaroni and green onions to the pot and stir until well coated with the cheese sauce.
  7. Transfer the macaroni and cheese to a baking dish and sprinkle with the breadcrumbs.
  8. Bake for 15-20 minutes, or until the breadcrumbs are golden and the macaroni and cheese is bubbly.
