Grilled Veggie and Halloumi Skewers

These grilled veggie and halloumi skewers are a delicious and healthy vegetarian option for your next barbecue or cookout.

Ingredients

  • Skewers - 8
  • Salt and pepper - To taste
  • Dried oregano - 1 teaspoon
  • Garlic - 2 cloves, minced
  • Lemon juice - 2 tablespoons
  • Olive oil - 2 tablespoons
  • Cherry tomatoes - 1 cup
  • Red onion - 1, cut into chunks
  • Bell peppers - 2, cut into chunks
  • Zucchini - 1, sliced
  • Halloumi cheese - 8 ounces, cut into cubes

Instructions

  1. Preheat the grill to medium-high heat.
  2. In a bowl, combine the olive oil, lemon juice, minced garlic, dried oregano, salt, and pepper. Mix well.
  3. Thread the halloumi cheese, zucchini, bell peppers, red onion, and cherry tomatoes onto the skewers.
  4. Brush the skewers with the marinade mixture, making sure to coat all sides.
  5. Place the skewers on the preheated grill and cook for about 5 minutes per side, or until the vegetables are tender and the halloumi cheese is slightly charred.
  6. Remove the skewers from the grill and serve hot.
  7. Optional: Serve with a side of tzatziki sauce for dipping.
