Mango and Quinoa Salad

This refreshing salad combines the sweetness of mangoes with the nuttiness of quinoa for a delicious and healthy dish.

Ingredients

  • Black pepper - 1/4 teaspoon
  • Salt - 1/2 teaspoon
  • Olive oil - 2 tablespoons
  • Lime juice - 2 tablespoons
  • Fresh cilantro - 1/4 cup, chopped
  • Red onion - 1/4 cup, finely chopped
  • Cucumber - 1, diced
  • Red bell pepper - 1, diced
  • Mango - 1 large, diced
  • Water - 2 cups
  • Quinoa - 1 cup

Instructions

  1. Rinse the quinoa under cold water to remove any bitterness.
  2. In a saucepan, bring the water to a boil. Add the quinoa and reduce the heat to low. Cover and simmer for 15 minutes, or until the quinoa is cooked and the water is absorbed. Remove from heat and let it cool.
  3. In a large bowl, combine the cooked quinoa, diced mango, red bell pepper, cucumber, red onion, and fresh cilantro.
  4. In a small bowl, whisk together the lime juice, olive oil, salt, and black pepper.
  5. Pour the dressing over the salad and toss to combine.
  6. Refrigerate for at least 30 minutes to allow the flavors to meld together.
  7. Serve chilled and enjoy!
