This refreshing salad combines the flavors of juicy tomatoes, crisp cucumbers, and nutty quinoa.
Ingredients
Black pepper - 1/4 teaspoon
Salt - 1/2 teaspoon
Olive oil - 2 tablespoons
Lemon juice - 2 tablespoons
Fresh parsley - 1/4 cup, chopped
Red onion - 1/4 cup, thinly sliced
Cucumber - 1 large, diced
Tomatoes - 2 cups, diced
Water - 2 cups
Quinoa - 1 cup
Instructions
Rinse the quinoa under cold water to remove any bitterness.
In a medium saucepan, bring the water to a boil. Add the quinoa and reduce the heat to low. Cover and simmer for 15 minutes, or until the quinoa is tender and the water is absorbed. Remove from heat and let it cool.
In a large bowl, combine the cooked quinoa, diced tomatoes, diced cucumber, sliced red onion, and chopped parsley.
In a small bowl, whisk together the lemon juice, olive oil, salt, and black pepper.
Pour the dressing over the quinoa salad and toss to combine.
Refrigerate for at least 30 minutes to allow the flavors to meld together.
