Mango and Cucumber Salad

This refreshing salad combines the sweetness of mangoes with the crispness of cucumbers for a perfect summer side dish.

Ingredients

  • Black pepper - 1/4 teaspoon
  • Salt - 1/4 teaspoon
  • Honey - 1 tablespoon
  • Lime juice - 2 tablespoons
  • Fresh cilantro - 1/4 cup, chopped
  • Red onion - 1/4 cup, thinly sliced
  • Cucumber - 1 large, peeled and diced
  • Mango - 2 ripe, peeled and diced

Instructions

  1. In a large bowl, combine the diced mango, cucumber, red onion, and chopped cilantro.
  2. In a small bowl, whisk together the lime juice, honey, salt, and black pepper.
  3. Pour the dressing over the mango and cucumber mixture and toss to coat evenly.
  4. Refrigerate for at least 30 minutes to allow the flavors to meld together.
