Shöltè Soup

A hearty and flavorful soup made with a variety of vegetables and spices.

Ingredients

  • Fresh parsley - 2 tablespoons, chopped
  • Salt and pepper - To taste
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Vegetable broth - 6 cups
  • Garlic - 3 cloves, minced
  • Cabbage - 1 cup, shredded
  • Green beans - 1 cup, chopped
  • Tomatoes - 2, diced
  • Potatoes - 2, diced
  • Celery - 2 stalks, sliced
  • Carrots - 2, sliced
  • Onion - 1, diced
  • Olive oil - 2 tablespoons

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the onion, carrots, and celery. Cook until the vegetables are softened, about 5 minutes.
  3. Add the potatoes, tomatoes, green beans, cabbage, and garlic. Cook for another 5 minutes.
  4. Pour in the vegetable broth and bring to a boil.
  5. Reduce the heat to low and simmer for 30 minutes, or until the vegetables are tender.
  6. Stir in the paprika, cumin, salt, and pepper. Cook for an additional 5 minutes.
  7. Remove from heat and garnish with fresh parsley.
  8. Serve hot and enjoy!
