Mandazi

Mandazi is a popular East African fried bread that is soft, fluffy, and slightly sweet. It is often enjoyed as a breakfast or snack.

Ingredients

  • Powdered sugar (optional) - For dusting
  • Oil for frying - Enough for deep frying
  • Vanilla extract - 1 teaspoon
  • Vegetable oil - 2 tablespoons
  • Coconut milk - 1 cup
  • Salt - 1/2 teaspoon
  • Baking powder - 1 tablespoon
  • Sugar - 1/4 cup
  • All - purpose flour - 3 cups

Instructions

  1. In a large bowl, combine the all-purpose flour, sugar, baking powder, and salt.
  2. Add the coconut milk, vegetable oil, and vanilla extract to the dry ingredients. Mix until a soft dough forms.
  3. Knead the dough on a lightly floured surface for about 5 minutes, until smooth and elastic.
  4. Cover the dough with a clean kitchen towel and let it rest for 10 minutes.
  5. Heat oil in a deep frying pan or pot over medium heat.
  6. Divide the dough into 12 equal portions and shape each portion into a ball.
  7. Flatten each ball into a disc, about 1/4 inch thick.
  8. Carefully place the flattened dough discs into the hot oil and fry until golden brown on both sides, about 2-3 minutes per side.
  9. Remove the mandazi from the oil and drain on a paper towel-lined plate.
  10. Optional: Dust the mandazi with powdered sugar before serving.
  11. Serve warm and enjoy!
