Coconut Pancakes

These fluffy coconut pancakes are a tropical twist on a classic breakfast favorite.

Ingredients

  • Fresh berries - For serving
  • Maple syrup - For serving
  • Vegetable oil - 2 tablespoons
  • Vanilla extract - 1 teaspoon
  • Egg - 1
  • Coconut milk - 1 cup
  • Shredded coconut - 1/2 cup
  • Sugar - 2 tablespoons
  • Salt - 1/4 teaspoon
  • Baking powder - 2 teaspoons
  • All - purpose flour - 1 cup

Instructions

  1. In a large bowl, whisk together the flour, baking powder, salt, and sugar.
  2. Stir in the shredded coconut.
  3. In a separate bowl, whisk together the coconut milk, egg, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Heat a non-stick skillet or griddle over medium heat and brush with vegetable oil.
  6. Pour 1/4 cup of batter onto the skillet for each pancake.
  7. Cook until bubbles form on the surface, then flip and cook for another 1-2 minutes, until golden brown.
  8. Repeat with the remaining batter.
  9. Serve the coconut pancakes with maple syrup and fresh berries.
