Sfinge

Sfinge is a traditional Moroccan doughnut-like pastry that is light, fluffy, and delicious. It is often served with honey or powdered sugar.

Ingredients

  • Honey or powdered sugar - For serving
  • Vanilla extract - 1 teaspoon
  • Vegetable oil - 2 tablespoons
  • Milk - 1 cup
  • Eggs - 2
  • Sugar - 1/4 cup
  • Salt - 1/4 teaspoon
  • Baking powder - 2 teaspoons
  • All - purpose flour - 2 cups

Instructions

  1. In a large bowl, whisk together the flour, baking powder, salt, and sugar.
  2. In a separate bowl, beat the eggs. Add the milk, vegetable oil, and vanilla extract. Mix well.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
  4. Heat vegetable oil in a deep pot or fryer to 350°F (175°C).
  5. Drop spoonfuls of the batter into the hot oil, frying a few at a time. Cook until golden brown, about 2-3 minutes per side.
  6. Remove the sfinge from the oil and drain on paper towels.
  7. Serve warm with honey or sprinkle with powdered sugar.
