Lemon and Thyme Roasted Potatoes

These lemon and thyme roasted potatoes are crispy on the outside, tender on the inside, and bursting with flavor.

Ingredients

  • Black pepper - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Garlic powder - 1 teaspoon
  • Fresh thyme leaves - 1 tablespoon
  • Fresh lemon juice - 2 tablespoons
  • Olive oil - 3 tablespoons
  • Potatoes - 1.5 lbs, cut into small cubes

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a large bowl, combine the olive oil, lemon juice, thyme leaves, garlic powder, salt, and black pepper.
  3. Add the potatoes to the bowl and toss until they are well coated with the mixture.
  4. Spread the potatoes in a single layer on a baking sheet.
  5. Roast in the preheated oven for 35-40 minutes, or until the potatoes are golden brown and crispy, stirring once halfway through.
  6. Remove from the oven and let cool for a few minutes before serving.
