Lemon and Asparagus Linguine

A light and refreshing pasta dish perfect for spring. The tangy lemon and crisp asparagus complement each other perfectly in this easy, quick meal.

Ingredients

  • Parmesan cheese - 1/2 cup, grated
  • Salt and pepper - To taste
  • Lemon juice - 2 tablespoons
  • Lemon zest - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Asparagus - 1 bunch, trimmed and cut into 1-inch pieces
  • Linguine - 8 ounces

Instructions

  1. Cook the linguine according to the package instructions. Add the asparagus for the last 3 minutes of cooking. Drain and set aside.
  2. Heat the olive oil in a large skillet over medium heat. Add the garlic and cook until fragrant, about 1 minute.
  3. Add the cooked linguine and asparagus to the skillet. Stir in the lemon zest, lemon juice, salt, and pepper.
  4. Cook for 2-3 minutes, until everything is well combined and heated through.
  5. Remove from heat and stir in the grated Parmesan cheese.
  6. Serve immediately, with extra Parmesan cheese on top if desired.
