Linguine with Scallops and Lemon Sauce

A delightful seafood pasta dish with a zesty lemon sauce.

Ingredients

  • Grated parmesan cheese - 1/2 cup
  • Fresh parsley - 1/4 cup, chopped
  • Salt and pepper - To taste
  • Lemon zest - 1 tablespoon
  • Lemon juice - 1/4 cup
  • Garlic - 3 cloves, minced
  • Olive oil - 2 tablespoons
  • Scallops - 1 pound
  • Linguine - 1 pound

Instructions

  1. Cook the linguine according to the package instructions. Drain and set aside.
  2. Heat the olive oil in a large skillet over medium heat. Add the scallops and cook until golden, about 2 minutes per side. Remove from the skillet and set aside.
  3. In the same skillet, add the garlic and cook until fragrant, about 1 minute.
  4. Add the lemon juice, lemon zest, salt, and pepper. Bring to a simmer.
  5. Add the cooked linguine to the skillet and toss to coat in the sauce.
  6. Add the scallops back to the skillet and toss to combine.
  7. Serve the pasta with a sprinkle of fresh parsley and grated Parmesan cheese.
