A delightful seafood pasta dish with a zesty lemon sauce.
Ingredients
Grated parmesan cheese - 1/2 cup
Fresh parsley - 1/4 cup, chopped
Salt and pepper - To taste
Lemon zest - 1 tablespoon
Lemon juice - 1/4 cup
Garlic - 3 cloves, minced
Olive oil - 2 tablespoons
Scallops - 1 pound
Linguine - 1 pound
Instructions
Cook the linguine according to the package instructions. Drain and set aside.
Heat the olive oil in a large skillet over medium heat. Add the scallops and cook until golden, about 2 minutes per side. Remove from the skillet and set aside.
In the same skillet, add the garlic and cook until fragrant, about 1 minute.
Add the lemon juice, lemon zest, salt, and pepper. Bring to a simmer.
Add the cooked linguine to the skillet and toss to coat in the sauce.
Add the scallops back to the skillet and toss to combine.
Serve the pasta with a sprinkle of fresh parsley and grated Parmesan cheese.
