Laping

Laping is a traditional Tibetan dish made with mung bean noodles, vegetables, and a spicy sauce.

Ingredients

  • Salt - To taste
  • Chili flakes - 1/2 teaspoon
  • Ginger - 1 teaspoon, grated
  • Garlic - 2 cloves, minced
  • Sesame oil - 1 tablespoon
  • Rice vinegar - 1 tablespoon
  • Soy sauce - 2 tablespoons
  • Sesame seeds - 1 tablespoon
  • Cilantro - 1/4 cup, chopped
  • Green onions - 4, chopped
  • Red bell pepper - 1, thinly sliced
  • Carrot - 1, julienned
  • Cucumber - 1, thinly sliced
  • Mung bean noodles - 200 grams

Instructions

  1. Cook the mung bean noodles according to package instructions. Drain and rinse with cold water.
  2. In a large bowl, combine the cooked noodles, cucumber, carrot, red bell pepper, green onions, and cilantro.
  3. In a small bowl, whisk together the soy sauce, rice vinegar, sesame oil, minced garlic, grated ginger, chili flakes, and salt.
  4. Pour the sauce over the noodle mixture and toss to coat evenly.
  5. Garnish with sesame seeds and serve chilled.
