Keto Spinach and Feta Stuffed Mushrooms

These keto-friendly stuffed mushrooms are filled with a delicious mixture of spinach and feta cheese.

Ingredients

  • Salt and pepper - To taste
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Feta cheese - 1/2 cup, crumbled
  • Spinach - 2 cups, chopped
  • Large mushrooms - 12

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Remove the stems from the mushrooms and set aside.
  3. In a skillet, heat the olive oil over medium heat. Add the garlic and cook until fragrant.
  4. Add the chopped mushroom stems and spinach to the skillet. Cook until the spinach wilts and any excess moisture evaporates.
  5. Remove the skillet from heat and let the mixture cool slightly.
  6. In a bowl, combine the cooked spinach and mushroom mixture with the crumbled feta cheese. Season with salt and pepper to taste.
  7. Stuff each mushroom cap with the spinach and feta mixture, pressing it down gently.
  8. Place the stuffed mushrooms on a baking sheet and bake for 20-25 minutes, or until the mushrooms are tender and the filling is golden brown.
  9. Serve hot and enjoy!
