Joojeh Kebab

Joojeh kebab is a delicious Persian grilled chicken kebab marinated in a flavorful saffron and lemon marinade.

Ingredients

  • Skewers - 4
  • Cherry tomatoes - 8
  • Bell peppers - 2, cut into chunks
  • Onion - 1, cut into chunks
  • Black pepper - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Garlic - 3 cloves, minced
  • Saffron threads - 1/2 teaspoon, dissolved in 1 tablespoon hot water
  • Olive oil - 2 tablespoons
  • Lemon juice - 1/4 cup
  • Chicken breasts - 4, boneless and skinless

Instructions

  1. In a bowl, combine the lemon juice, olive oil, saffron water, minced garlic, salt, and black pepper to make the marinade.
  2. Cut the chicken breasts into bite-sized pieces and add them to the marinade. Mix well to coat the chicken evenly. Marinate for at least 1 hour, or overnight for best results.
  3. Preheat the grill to medium-high heat.
  4. Thread the marinated chicken pieces onto skewers, alternating with chunks of onion, bell peppers, and cherry tomatoes.
  5. Grill the skewers for about 10-12 minutes, turning occasionally, until the chicken is cooked through and slightly charred.
  6. Serve the Joojeh kebabs hot with rice or bread, and enjoy!
