Jicama and Red Bell Pepper Salad

This refreshing salad combines crunchy jicama, sweet red bell peppers, and a tangy lime dressing.

Ingredients

  • Black pepper - 1/4 teaspoon
  • Salt - 1/2 teaspoon
  • Honey - 1 teaspoon
  • Olive oil - 1 tablespoon
  • Lime juice - 2 tablespoons
  • Cilantro - 1/4 cup, chopped
  • Red bell pepper - 1 large, thinly sliced
  • Jicama - 1 medium, peeled and julienned

Instructions

  1. In a large bowl, combine the jicama, red bell pepper, and cilantro.
  2. In a small bowl, whisk together the lime juice, olive oil, honey, salt, and black pepper.
  3. Pour the dressing over the jicama and red bell pepper mixture.
  4. Toss well to coat all the ingredients with the dressing.
  5. Refrigerate for at least 30 minutes to allow the flavors to meld together.
