Jicama and Bell Pepper Slaw

This refreshing and crunchy slaw is made with jicama, bell peppers, and a tangy dressing.

Ingredients

  • Black pepper - 1/4 teaspoon
  • Salt - 1/2 teaspoon
  • Honey - 1 tablespoon
  • Olive oil - 2 tablespoons
  • Lime juice - 2 tablespoons
  • Cilantro - 1/4 cup, chopped
  • Green bell pepper - 1, thinly sliced
  • Yellow bell pepper - 1, thinly sliced
  • Red bell pepper - 1, thinly sliced
  • Jicama - 1 medium, peeled and julienned

Instructions

  1. In a large bowl, combine the jicama, bell peppers, and cilantro.
  2. In a small bowl, whisk together the lime juice, olive oil, honey, salt, and black pepper.
  3. Pour the dressing over the jicama and bell pepper mixture.
  4. Toss well to coat all the ingredients with the dressing.
  5. Refrigerate for at least 30 minutes to allow the flavors to meld together.
  6. Serve chilled and enjoy!
