Jicama and Avocado Salad

This refreshing salad combines the crispness of jicama with the creaminess of avocado, tossed in a tangy lime dressing.

Ingredients

  • Black pepper - 1/4 teaspoon
  • Salt - 1/2 teaspoon
  • Honey - 1 tablespoon
  • Olive oil - 2 tablespoons
  • Lime juice - 2 tablespoons
  • Cilantro - 1/4 cup, chopped
  • Red onion - 1/4 cup, thinly sliced
  • Red bell pepper - 1, thinly sliced
  • Avocado - 1 large, diced
  • Jicama - 1 medium, peeled and julienned

Instructions

  1. In a large bowl, combine the jicama, avocado, red bell pepper, red onion, and cilantro.
  2. In a small bowl, whisk together the lime juice, olive oil, honey, salt, and black pepper.
