Jicama and Corn Salad

This refreshing salad combines the crispness of jicama with the sweetness of corn for a delicious and healthy side dish.

Ingredients

  • Black pepper - 1/4 teaspoon
  • Salt - 1/2 teaspoon
  • Honey - 1 tablespoon
  • Olive oil - 1 tablespoon
  • Lime juice - 2 tablespoons
  • Cilantro - 1/4 cup, chopped
  • Red bell pepper - 1, diced
  • Corn kernels - 1 cup, cooked
  • Jicama - 1 medium, peeled and julienned

Instructions

  1. In a large bowl, combine the jicama, corn kernels, red bell pepper, and cilantro.
