Jicama and Carrot Sticks with Hummus

This refreshing and healthy snack features jicama and carrot sticks served with a creamy and flavorful hummus dip.

Ingredients

  • Fresh parsley - 2 tablespoons, chopped (for garnish)
  • Salt - To taste
  • Paprika - 1/2 teaspoon
  • Cumin - 1 teaspoon
  • Olive oil - 2 tablespoons
  • Garlic - 1 clove, minced
  • Lemon juice - 2 tablespoons
  • Tahini - 2 tablespoons
  • Chickpeas - 1 can (15 oz), drained and rinsed
  • Carrots - 4 medium, peeled and cut into sticks
  • Jicama - 1 medium, peeled and cut into sticks

Instructions

  1. In a food processor, combine the drained chickpeas, tahini, lemon juice, minced garlic, olive oil, cumin, paprika, and salt. Process until smooth and creamy.
  2. Transfer the hummus to a serving bowl and garnish with chopped fresh parsley.
  3. Arrange the jicama and carrot sticks on a platter.
  4. Serve the jicama and carrot sticks with the hummus dip on the side.
